Sparkling Mint Limeade - Refreshing Mocktail Recipe (1)

Calling all thirsty preggos slash mojito-drinking, citrus-loving, all things sweet, cold, and fizzy-fanatics! Today I’m sharing the recipe you’ll be drinking all summer long – Sparkling Mint Limeade – plus a light and luscious pizza dinner to go with it.

Happy pizza Friday, btw. :)

As you may know, I’ve been on a Chick-fil-A lemonade kick this entire pregnancy (only 8.93593 weeks to go, but who’s counting?) The tartness. The sweetness. The CRUSHED ICE. Needless to say I cannot get enough, which is why I decided to make its twisted sister at home so I can enjoy a frosty glass anytime I want. Limeade, friends, spiked with mint and BUBBLES. Forget the drive through, all you need is 4 everyday ingredients to make Sparkling Mint Limeade at home.

Real talk, the first time I took a sip of this yummy drink I did an awkward jig in my kitchen over how perfect it is. Super tart, just sweet enough, a hint of minty mojito flavor – all poured over a frosty glass of crushed ice. Refreshing to the max. I will be drinking these ALL summer long.

Before we go on I need to tell you that this fun and fizzy recipe is brought to you by the folks at Freschetta. I’ve been working with Freschetta for a few years developing recipes that pair well with their awesome gluten-free frozen pizzas. Yes, that’s a thing! Not only are their pizza crusts preservative-free andcertified by the National Celiac Association (formerly known as the Celiac Support Association), but they’re made with recognizable ingredients and DO NOT TASTE GLUTEN FREE.

A reader once told me she had to dig the Freschetta pizza box out of the recycling bin after eating to double check that it said gluten-free – she just couldn’t believe how “real” it tasted. That’show good these pizzas are, and the newGluten Free Spinach & Roasted Mushroom Pizza andGluten Free Tuscan Style Chicken Pizzaflavors, which will be available starting this month in select markets, are no exception (here’s a product locator.)

To celebrate, Freschetta and I are offering two ways to try their new gluten-free pizzas,

Freschetta Gluten Free Tuscan Style Chicken Pizza features grilled chicken, roasted vegetables, mozzarella cheese and red sauce, while theGluten Free Spinach & Roasted Mushroom Pizza is made with a blend of mozzarella cheese, spinach, roasted portabellini mushrooms and a creamy onion sauce.

To eat a frozen pizza with creamy white sauce vs red sauce felt very exciting to this Celiac, and I figured it would for my fellow gluten-free peeps out there too, so I wanted to especially highlight theGluten Free Spinach & Roasted Mushroom Pizza today.

Each pizza is topped with big bites of roasted mushrooms and chopped spinach, and takes just 12 minutes to go from this…

Crispy crust, creamy sauce, cheesy toppings – so, so tasty. Truly I would never know this was frozen – it tastes exactly like thegluten-free pizzas I used to get from small, local pizza shops (which I don’t eat at anymore for fear of cross contamination) except I can keep it on hand to eat whenever a craving strikes. I am so thrilled to have this pizza in my life!

Whisk the ingredients together until the sugar has dissolved, semi-muddling the mint in the process, then refrigerate until chilled. The longer the mixture sits in the fridge, the more the mint flavor will come through.

When you’re ready to drink, strain the mixture into a pitcher through a fine mesh sieve to remove the mint then slowly stream in 2-1/2 cups club soda – aka the “sparkle” in Sparkling Mint Limeades!

Kristin, I’m a fan of Waterloo lemon lime sparkling water these days. It’s sugar free and no weird additives. Could I use it for the sparkling component in place of the club soda?
